Abstract: The study documents methods of breadfruit fermentation practiced within Micronesia and compares them to techniques in Polynesia, with a later survey of Melanesian technologies anticipated. Fieldwork consisted of interviews and observations conducted over a six-month period in 1983–1984 in Majuro, Ponape, Belau, Yap, and Guam, and includes a report on a 1982 survey of megalithic structures in Ponape for evidence of prehistoric fermentation pits. An outline section titled MMURO includes subsections on Asor, Woleai, and Ifalik. A historical note from Ebon cites Mrs. Snow’s practice, recorded by Whitney in 1871, of preparing enough kwoMin and other foods in advance to avoid making a fire on the Sabbath.
